Somehow a cooking method became the name of a steak. Anyway, the cuts at Staubitz are extra lean and ready for grilling. John, one of the owners, recommends seasoning with salt and pepper. Maybe rub with a garlic clove if you're feeling fancy. Then 5 minutes on one side, flip, 3 minutes on the other side. Cut thin slices against the grain, at a 45 degree angle.
