Suckling Pig Roast from Paisanos


Oven Roasted Suckling Pig

This is probably going to be the best pork you've ever had. Drop into Paisanos and order a 10 pound suckling pig. It comes gutted and cleaned. If you're squeamish like we are, ask them to remove the head.

When you're ready to cook, preheat the oven to 250 degrees. Season the pig inside and out with coarse sea salt and cracked pepper. Lay the pig on a foil-covered baking sheet (or two if needed) stomach down, with legs tucked underneath and pointing forward or to the side. Roast for about 2.5 hours – rotating once half way – until your meat thermometer reaches 130 degrees. Stick it into the thigh, not touching bone.

Then baste the pig with oil from the pan(s), and turn up the oven to 400 degrees. Let it cook until the thermometer reaches 160 degrees – probably around 45 minutes. Then remove the pig and let it cool for 30 minutes before carving and serving. Slurp!
